Ok - anybody got any foolproof sausage recipes?

I confess I enjoy sausage-making with my basic kit (leccy mincer and small stuffer). I have made some nice batches, but don't feel I have come up with my perfect recipe yet - I make venison and/or pork sausages - its a pretty therapeutic way to spend a Sunday evening with a nice bottle of red wine and the mincer going in the kitchen.

The washing-ups a bit of a chore, though!!

Sounds nice, I thought you were asking for recipes using sausages not making them :Facepalm: , have you tried making some mixed game? venison, rabbit, pigeon, pheasant in a mixture like game pie, it would probably need some belly pork to get the fat content suitable for frying.

One of my interests is eating :grin:

i like to try lots of different recipes, some times i have to go to the local butchers, but even better for you guys that are able to hunt or forage for most of the ingredients :)

i have a few cook books but i also use http://honest-food.net/

here is a recipe from that site

Makes about 5 pounds, or about 15 sausages

4 pounds venison, lamb or beef
1/2 pound venison, lamb or beef fat (optional)
1/2 pound pork fat (or 1 lb pork fat if not using venison fat)
1/4 cup gin or red wine
1/4 cup water
33 grams (about 2 tablespoons) Kosher salt
4 grams (1/2 teaspoon) Instacure No. 1 (optional)
6 cloves chopped fresh garlic
4 minced shallots
1 tablespoon ground black pepper
2 tablespoons ground dried porcini mushrooms
3 tablespoons minced sage
hog casings

Apologies for not making myself clear!! - yes recipes for sausage-making..

Not tried mixed game as yet - will have to try, although I wonder about mixing bird and mammal meats - I have to admit a good game pie is certainly worthwhile, so will have to give it a go. I have generally added fatty pork to venison, or concentrated on pork, when I find a piece on sale or special offer.

Nathan, thanks for the recipe - any recipe which suggests adding gin to your sausage mix finds instant favour here!! :thup:

Will have a look at the web-site you suggest, as I enjoy fiddling about in the kitchen!!

My two mincers in the kennel. The waste disposal unit isn't effective :thdn: The Crypto Peerless is a 3 phase mincer run through a frequency inverter. It does the business very well :grin: :grin: :grin:
I'll root some of my sausage making recipes out for you. Not done any for a while so this will give me a boot to get my arse into gear!

When I first looked at the picture, I thought for a minute you were sticking rabbits fur and all in your mincer - I know sausages will take a lot of roughage, but there's reason in all things!!
That looks like a fairly ferocious waste disposal unit to me (don't have one so no means of judging!)
