Biltong (making it in the uk)

As discussed a way of making biltong here in the uk ..
1st of all build or buy a biltong box ..(Google is your friend here)
Get your meat ... The better the meat the better the biltong ! (Venison for the win !)
Cut the meat into strips with the grain (the meat will shrink A LOT during curing)
Sterilise all your utensils with boiling water (including the hooks you're gonna use to hang the meat)
Coat the meat in coarse rock salt for 40mins or so (longer for thicker bits of meat)
When the time is up wash the salt off with cider vinegar . Splash some Worcester sauce or maggi general seasoning liquid on the meat then coat the meat with your spices and hang in the box til done (3 days to a week or more depending on the thickness of the meat strips)
(A good starting point for the spice is 50/50 black pepper and coriander, but alter to your taste ... Some add chile, some add garlic powder etc)

Good luck !! I struggle to leave the biltong alone for long enough ... Grabbing "samples" every day !!

I know what you mean it's very 'moorish' once you start. I get the guys to being out a massive bag to last a few weeks and it's usually done in within a couple of days!

As I married a Saffa my appreciation for their culture and food had grown and grown.
Biltong is now a way of life for me and what a delicious way it is as well!
We make our own at home as it is just so yummy and satisfying to produce it knowing every ingredient.
I would recommend that everyone tries biltong, it's not for every one but it cannot hurt to try something, can it?
We buy our biltong seasonings from a online company called www.spicevibe.co.uk
There are other people who sell but I prefer these guys, never had an issue with them or their products.
They import the crown national safari biltong seasonings and a load of others.
Might be worth having a look there.
